Health Benefits of Coconut Oil

Coconuts are an excellent source of "good" saturated fat! You may be wondering, how can saturated fat be good?! Whole natural coconut and cold-pressed coconut oil actually prevent arteriosclerosis and lower cholesterol levels! Coconut becomes harmful for you when it is heated, processed and hydrogenated-because it turns into trans fats. Trans fats are the product of the Processed Food Nation that we live in; they are used to extend the shelf life. Steaming your food (or eating it raw--even better) and then pouring the coconut oil on when the food is off the heat will make sure that it doesn't convert into trans fats in the cooking process.

Coconut water, the liquid found inside the coconut, has the same pH as human blood. Coconut milk, made from turning the white meat of the fruit into liquid, has a similar nutrient content and pH as human breast milk. Coconut water is so similar in molecular structure that it was used in place of blood plasma during WWII when there was a shortage!

When you are adding Coconut Oil to your diet be sure to:
1. Buy Cold-Pressed Coconut Oil
2. Do not heat it- add it off the heat
3. Buy unsweetened, unprocessed Coconut Oil that it is free of additives or preservatives

RECIPE: COCONUT GINGER SALAD DRESSING
Place equal parts Coconut Oil, Lime and Lemon Juice (freshly squeezed) into a bowl. Add ginger and garlic puree and spices as required.
